- Take presser cooker and add 3 big chopped potatoes.
- Add 2 chopped brindle.
- Add 1 ½ cup Loki[bottlegourd] and 1 cup cauliflower.
- Add 2-3 cup water.
- Add salt as per taste. Then close the lid and make 3 whistle on high flame.
- Take tawa and add 2 tbsp oil.
- Add ¾ cup chopped onions and ¾ cup chopped tomatoes.
- Add 1 tbsp green chilies and 1 tbsp ginger garlic paste.
- Add 1 tbsp butter. Mix it well.
- Add ½ tbsp garam masala, salt as per taste, 1 tbsp red chili powder, and ½ tbsp turmeric powder.
- Add 1 tbsp asafoetida powder, 1 tbsp pav bhaji masala. Mix well. If needed add 1 tbsp butter.
- Smash the gravy on tawa.
- Add 1 bowl boiled grinded vegetables puree.
- Add 2-3 tbsp vegetable stock. Mix it well. Bhaji is ready.After that keep bhaji aside.
- Then add 1 tbsp oil on tawa. Put pav on it toss them with oil.
- Ready to serve with buttermilk and papad.
- Keep the proportion of cauliflower less than the other veggies.
- You can also steam or cook them in a pan on the stove-top.
- The spice powders can be easily adjusted to suit your taste. So add them less or more according to your preferences.
