Ingredients
- Custard Powder (1/2 cup)
- Water (1 cup)
- Sugar (2/3 cup)
- Lemon juice (half lemon)
- Ghee (required amount)
- Corn flour (2tbsp)
- Water to make Rabdi (1/4 cup)
- Saffron (required amount)
- Sugar (4 tbsp)
- Whipped cream
- Chopped dry fruits
- Strawberry syrup

How to make Custard Rabdi Pudding | Rabdi Pudding Recipe:
Preparation of Custard
- In a cup put half a cup of custard powder.
- Add one cup of water. Mix it well till no lump must be formed over it.
- In a hot pan, add a cup of water.
- Add 2/3 of sugar. Dissolve it well and add some lemon juice by squeezing a half lemon.
- Add the custard mixture over it.
- Cook the mixtures in a medium flame and saute them well till it forms a jelly with a thick consistency.
- Once it is done, cool it slightly. In another pan, grease, it well by using the ghee.
- Adding the mixture over it. Spread the mixture in the pan firmly.
Preparation of Rabdi
- In a cup, add two tablespoons of Corn flour. Add 1/4 of water in it. Mix it well.
- In a hot pan, add 1 1/2 cup of milk.
- Spread some saffron over it.
- Boil it well by adding 4 tablespoons of sugar to it.
- After that, add the corn flour mixture.
- Mix it well with a thick consistency and cool it down completely.
- Add the hot Rabdi to the mold and allow it to freeze for 3-4 hours.
- Once it gets a proper shape, add some whipped cream.
- For the final touch, add chopped dry fruits over it and strawberry syrup, which gives an additional taste.
Notes
- Make sure that no lump has been formed.
- Thick consistency must be formed and it’s mandatory.
- The pudding has to be stored at temperatures of 2 °C – 6 °C.
- Once it has been consumed that remaining must be stored in the refrigerators as soon as possible.
