In this video, let’s make perfect Halwai Style Ras malai. Ras malai or Rasmalai is an Indian Mithai dessert. This recipe is basically made by first cooking flat Bengali style sponge rasgullas and then soaking them in a kesar-pista thin rabri (condensed milk) for few hours.

Rasmalai is one of the popular and delicious Bengali sweet where rasgullas (cottage cheese balls) are soaked in thickened and sweetened milk.

Making rasmalai at home is not difficult. You can easily make some rasgulla at home and then make the thickened milk.This recipe of thickened sweet milk is the traditional method made with reducing milk and thus tastes authentic like the rasmalai served in mithai shops.

The biggest problem that people face while making rasmalai at home is that the rasmalai balls often turn out hard whereas they should be totally soft and in fact melt in your mouth.

Rasmalai is usually served chilled and without any accompaniments. While serving, also serve the thickened milk with the rasmalai.it is topped with choice of dry fruits including pista, kaju and badam before serving.

1. Take a pan and add 1 litter. Milk. Boil it for 5 minutes.

7. Add some kesar.

8. Add 1 tbsp. cardamom powder. Mix it well.

9. Stir continuously until milk thicken.

10. Add 1 tbsp chopped pista, 1 tbsp chopped cashew nuts, and 1 tbsp chopped almonds.

11. Take paneer and knead for some time then add 1 tbsp corn flour.

12. Knead it and make soft dough. Then take small portion of dough and make small balls.

13. Take a pan and add 1 ½ cup water and add ¾ cup sugar.

14. Add paneer balls in sugar syrup.

15. Cook until they become double size. After that strain and squeezes the balls.

16. Take glasses and add paneer balls and milk mixture.
