How to make Stuffed Potato Brinjal | Bharwan Aloo Baingan Sabji recipe with step by step photos:
1. Take a pan and add 4 tbsp gram flour and 1 ½ tbsp oil. Roast it.
2. Add 1/3 cup coconut crumble. Roast well.
3. Put out the mixture in bowl and add 1/3 cup roasted crushed peanuts.
4. Add ½ tbsp turmeric powder, salt as per taste and 1 ½ tbsp red chili powder.
5. Add 1 tbsp sugar.
6. Add 1 tbsp lemon juice and ½ tbsp asafoetida powder.
7. Add 1 tbsp cumin powder. Mix it properly.
8. Take a pan and add oil and add ½ cup small Brinjal. Fry it. After they fried take out and keep aside.
9. Take 1 bowl baby potatoes and fry it.
10. Make cut on center of potatoes and Brinjal. Fill gram flour mixture into baby potato and Brinjal.
11. Take a pan and add 2 ½ tbsp oil and add 1 tbsp. mustard seeds. Then add 1 tbsp cumin seeds.
12. Add ½ tbsp turmeric powder and ½ tbsp asafoetida powder. Then add some curry leaves. Saute well.
13. Add 2 tbsp chopped green chili and add 1 ½ tbsp ginger. Then add 1 cup chopped onion. Saute well.
14. Add 1 cup fine chopped tomatoes. Then add remaining filling masala. Add salt as per taste and 1 ½ tbsp red chili powder.
15. Add ½ tbsp black salt and add 1 tbsp cumin powder.
16. Add 1 cup water, ½ tbsp garam masala and 1 tbsp ghee.
17. Add stuffed Brinjal and baby potatoes. Mix well then add 1 tbsp garlic chutney. Mix it well.
18. Ready to serve it with roti, papad, buttermilk and stuffed chilli.
